Abstract

One third of the late potato crop is lost during harvesting, transportation, preparation for storage, sorting and storage. To drastically reduce losses, it is necessary to prepare the fields for harvesting, prevent mechanical damage and strictly adhere to the storage regime. The biological and physiological properties of potatoes, biochemical processes occurring during storage, and factors affecting product quality were analyzed. The technology of preparing potatoes for storage, sorting, drying, organizing the treatment period, and storing them in various types of warehouses was also covered.
